I just started playing around with an iPhone app called iMotion that creates stop-motion and time-lapse movies. Of course, this might not be helpful to you if you don't have an iPhone, but it's pretty cool and just .99 cents for those of you that do.
I have iMotion too. It's a great app, but there's a better app (imo) for the iPhone called Stop Motion Recorder. The interface is simple, appealing, and I think it has more features. It's only $0.99 too. Best of all, it has a feature called "clap shot". You won't have to walk back to the camera to shoot the next frame unless you want to check the shot or test the animation. Try it out, I think you'll like it!
I've also been experimenting with stop motion animation using Toon Boom Studio for the PC and I love the software. Although, I admit I might be biased, because I'm already familiar with it and I sometimes use it for 2d animation.
